Salsa Balsamico
While managing an estate in Tuscany Bruce & Anna-Barbara
attended a seminar on the production of traditional
Aceto Balsamico.
They were so overwhelmed by the great concentration
and flavour of the traditionally made Balsamic Vinegar,
that they gave each other as their wedding present
a so-called "batteria" (series) of the traditional
Aceto Balsamico barrels and in 1993 Italy, started
with their own production of this great culinary delight.
Their Salsa Balsamico (Balsamic sauce) is made by
the traditional method
of the world famous Aceto Balsamico Tradizionale di
Modena, developing a fullness of flavour in small
caratelli (barrels),
each made of a different wood - chestnut, cherry,
mulberry, ash and oak.
Each year in November a small amount of this "black
gold" is released exclusively to our Friends
of Unison. |
